Healthy Mini Apple Muffins

 

Healthy Mini Apple Muffins

Makes 24 mini muffins
Prep time: 10 minutes
Cook time: 15 minutes


Ingredients:


  • 2 medium apples, grated
  • 1 cup whole wheat flour
  • 1 cup oats
  • pinch of salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp flax seed
  • 1/3 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup water


Directions:


    1. In a medium mixing bowl combine the flour, oats, salt, baking soda, cinnamon, flax, and sugar.


    2. Mix until all is well combined.


    3. Stir in the vegetable oil and water.


    4. Then fold in the grated apples.


    5. Spoon mixture into a greased mini muffin pan.


    6. Bake at 350 degrees for about 15 minutes.
