Healthy Pumpkin Pecan Bread Recipe

Ingredients


  • 1 ¼ cups whole wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • 1 tsp pumpkin spice
  • 1/8 tsp sea salt
  • 1 cup pumpkin (fresh or canned)
  • 1 egg
  • 3 tbsp molasses
  • 2 tbsp brown sugar
  • 1 tsp vanilla
  • 1/3 cup pecan pieces


Instructions:


1. Preheat the oven to 375 degrees and spray 8” x 4” non-stick loaf pan with cooking spray.
2. In a bowl, combine flour, baking powder, baking soda, cinnamon, pumpkin spice, and salt.


3. In a separate bowl blend the pumpkin, egg, molasses, brown sugar, and vanilla, until the consistency is smooth.


4. Pour pumpkin mixture over flour mixture and stir together.


5. Fold in the pecan pieces.


6. Pour in the pan and sprinkle with additional pecan and brown sugar if desired and bake for about 35 minutes.


 


7. Cool completely on a rack before slicing.


 


Note: This recipe would be great in addition to your Thanksgiving table. The perfect flavors of pumpkin and spices for Fall. Served warm with butter.
